Same playbook with honey. Real honey can't sit in a tank for a year either. It crystallizes, ferments, and every batch tastes like the field it came from. So the big packers flash-heat it to 160F+, which kills the yeast and cooks off the enzymes and aroma. Then force it through ultrafilters fine enough to remove every grain of pollen. Pollen is honey's fingerprint. It's the only way to prove what flowers, region, and country it came from. Strip it out and the honey can be blended from a dozen sources and cut with cheap fillers like corn and rice syrup. When the EU tested imported honey, 46% was flagged as being altered. Their labels all still said 100% pure honey. Real honey crystallizes, changes with the season, and has pollen in it. Careful what you purchase.
