  • El Silencio — Chiroso Washed $37

For years everyone assumed Chiroso was a Caturra mutation. It looks like one — short trees, pale green leaves, and it grows the way Caturra grows. Then the genetics came back Ethiopian. That is the whole coffee in one sentence: it looks Colombian and it drinks like something that wandered in from somewhere else.

  • La Roca — Gesha Washed $64

Gesha is the most name-dropped variety in coffee, which is exactly why we're slow with it. Most of what crosses our cupping table is expensive and forgettable. Then this one: jasmine, bergamot, Earl Grey, lime. All four, every cup, every time we went back to the table. The argument ended there.

  • La Divisa — Pink Bourbon $37

This is the lot that made us say it out loud: Pink Bourbon really is a different animal. Sweet, clear, nectarine still going a minute after the sip. We bought what Diofanor would give us. Diofanor Ruiz farms La Divisa in Buenavista, Quindío — 1,600 to 2,000 meters up, volcanic ash under everything.

  • HUILA DECAF — SUGARCANE PROCESS $22

Decaf gets treated like an apology. We cupped this one next to caffeinated lots and it didn't need one. Chocolate, nuts, and a mouthfeel that fills the room. So we bought it.

  • The Lionrush Five (4 Back to the Essence + Smart Coffee) $78

Coffees from the Back to the Essence line: Espresso Italiano, Brazil, Colombia, Ethiopia plus Smart Coffee. From dark blend to bright single-origin to functional, all in one box.

  • Iconic Origins (Brazil + Colombia + Ethiopia) $54

Three single-origin coffees from three of the most important origins in specialty coffee. The Brazil comes from family farms in Carmo de Minas: sun-dried, Yellow Bourbon, almond and chocolate. The Colombia is from Nariño, washed, volcanic soil at 2,300m, cane sugar and cacao.
